Angel's Kiss Cookies

Ingredients
- 3/4 cup flour
- 1/2 cup sugar
- 1/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 2 tablespoons very finely ground Angel's Kiss coffee
- 1/4 cup finely shredded coconut
- 1/2 teaspoon vanilla
- 1/2 cup butter, softened
- 1/4 cup miniature chocolate chips
Directions
- . Whisk together the flour, sugar, baking soda, baking powder, and coffee
- . Add coconut and vanilla
- . Add the butter
- . Mix with electric mixer or food processor
- . Stir in the chocolate chips
- . Divide the dough in half and form each half into a roll about 8 inches long
- . Place each roll on a 12 inch piece of wax paper and roll up carefully
- . Chill in refrigerator until firm, about 1 hour
- . Pre-heat oven to 400
- . With a serrated knife, make 1/4 inch slices
- . Place each cookie onto a parchment lined shiny cookie sheet
- . Bake for about 7 minutes
- . Remove from oven and allow to rest (the cookies will be soft but will firm up when cool)
- . If desired, melt bittersweet chocolate; drizzle on top and sprinkle with coconut. Enjoy!
