Coconut Matcha Oatmeal

Ingredients
- ½ cup quick oats
- ¾ cup coconut milk*
- ¾ cup cream of coconut*
- Pinch salt
- 1 cup cream
- 1 teaspoon matcha powder
- 1 Tablespoon shredded coconut (optional)
- .Place oatmeal and the coconut milk and cream of coconut in a microwaveable bowl and microwave on high for 1 ½ minutes. Stir.
- .Whisk the cream and matcha together and microwave on high for 1 minute
- .To serve : Spoon the oatmeal into 2 serving bowls – pour over matcha cream and sprinkle with coconut
- Note: * If you prefer your oatmeal less sweet increase the coconut milk to 1 cup and reduce the coconut cream to ½ cup
