Matcha Melt-in-Your- Mouth Shortbread

You will need the following ingredients
6 oz soft butter
½ cup confectioner’s sugar
½ cup Birds Custard Powder*
1 1/3 cups All purpose flour
½ teaspoon matcha
1 cup sugar
Method:
Preheat oven to 350
Beat together the butter, confectioners sugar, custard powder, flour and matcha
Until smooth –
Roll teaspoons of the dough in the sugar and set on parchment paper lined cookie sheets
Flatten cookies by cross hatching with a fork
Bake for about 12 – 15 minutes or until JUST taking on color
Remove from oven allow to cool for 5 minutes then roll the cookies again GENTLY
in sugar.
Notes:
Will keep in airtight container for 2 weeks
*Birds Custard Powder is available in the ‘British section’ now at most supermarkets – also at Hispanic markets like Fiesta.
