Almond Enjoy Coffee Drop Cookies

(adapted from Betty Crocker's Picture Cookbook 1958)
Ingredients
- 1 cup butter, at room temp
- 2 cups dark brown sugar, lightly packed
- 2 eggs
- 1/2 cup cold brewed Almond Enjoy coffee
- 3 1/2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp nutmeg
- 1 tsp cinnamon
Directions
- . Beat together the butter, brown sugar, and eggs
- . Stir in the coffee
- . In a separate bowl stir together the dry ingredients, then stir into batter
- . Chill 1 hour
- . Pre heat oven to 400℉
- . Drop teaspoonfuls of batter onto a parchment paper lined cookie sheet spaced 2" apart
- . Bake until set (about 8 - 10 minutes or until the cookie is resistant to a light touch)
- . Cool on a rack
- . Enjoy with your cup of coffee!
