Gluten-free Chocolate Chip Cookies

Ingredients
- 1 cup soft butter
- 1 cup sugar
- ¾ cup brown sugar
- 3 eggs
- 1 teaspoon vanilla
- 2 ¾ cups Gluten Free flour (we used Cup 4 Cup brand)
- ½ teaspoon salt
- ½ teaspoon baking Soda
- 1 cup chocolate chips
- ½ cup Cultured Cup drinking chocolate
- ½ cup currants or raisins or craisins
- . Preheat oven to 350
- . Beat together the butter – sugars until light
- . Beat in the eggs and vanilla
- . Stir in the gluten free flour – salt and baking soda and mix until well blended
- . Stir in the chocolate chips, drinking chocolate and your choice raisins or craisins
- . Place rounded tablespoons of batter onto greased or parchment paper lined cookies sheets
- . Bake for about 10 minutes or just until browned
- Note: This produces a fairly soft cookie – for a crisper result bake 3-4 minutes longer. Cool on rack
