Phil's Mother's Chocolate Buttermilk Loaf

Ingredients
- 1 cup sugar
- ½ cup soft salted butter
- 2 eggs
- 1 cup buttermilk
- 1 ½ cups AP flour
- 2 oz dark chocolate, chopped fine, melted
- ½ cup dark cocoa
- ¼ cup CC drinking chocolate
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
Directions for Cake
- . Pre heat oven to 350
- . Beat together the butter and sugar until light
- . Beat in the eggs one at a time
- . Stir in the buttermilk
- . Stir in the remaining ingredients until well blended
- . Turn into a buttered 9x5 loaf pan
- . Bake for about 45 – 55 minutes or until a toothpick inserted into the center of the cake comes out clean
- . Allow to cool then unmold the cake from the pan

Coffee Glaze: [adapted from Chocolate by Nick Malgieri]
- 1 ½ cups confectioners sugar [add more if necessary]
- 1 Tablespoon Plaza Blend coffee ground fine
- 2 Tablespoons hot water
- 3 oz semi sweet chocolate, chopped
Directions for Coffee Glaze:
- . Steep the fine coffee grounds in the water for 5 minutes then strain
- . Combine the ‘coffee’ with the confectioner’s sugar adding enough sugar to make a pourable glaze
- . Then spoon carefully over the top of the cake, spreading to cover the cake.
