Chocolate Mint Granita

Ingredients
- 2 cups strong brewed chocolate mint tea, strained
- ½ cup sugar
- 3-4 Tablespoons cocoa
- 1-2 oz dark chocolate
- 1 sprig fresh spearmint
- . Heat the tea in a medium saucepan together with the sugar and cocoa
- . Bring JUST to the boil
- . Remove from heat, stir in the dark chocolate
- . Add the sprig spearmint and allow to chill for about 2-3 hours
- . Stir the mixture and remove the spearmint
- . Freeze
- . To serve : allow to defrost SLIGHTLY ….. break up the crystals and serve with a spearmint sprig garnish!
